Since 1993, when Ferruccio Ferragamo bought the estate from the Duke Amedeo D’Aosta, Il Borro started an extensive restoration project to return the medieval village and the whole estate to its former glory, preserving and improving the property for future generations. And that is why Ferruccio Ferragamo and his son Salvatore – CEO & Wine Division Director, started implementing a strategy founded on corporate social responsibility and sustainability that contributes to the environment, community, culture, history and ensuring ethical tourism.
The estate entirely survives with its own power thanks to the solar panels placed on property and this is only one of a few of the initiatives that make Il Borro an alternative concept of luxury hospitality A member of Relais Chateaux since 2012, Il Borro offers different type of accommodations for different taste. Entirely converted to organic farming since 2015, Il Borro produces wine, oil and agricultural products only grown with natural fertilizers and organic pesticides. At Il Borro seeds of the legumes and barley are grown to fertilize the vineyards. The Chianina cattle furnish with the manure needed to bring back microflora to the soil. And all of this contributes to the excellent wine production that started when in 1995 the first grapes were planted and by 1999 the very first vintage of Il Borro wine was produced. Now Il Borro offers a total of 12 different labels and 10 of them rigorously organic and representing the most authentic expression of its Tuscan unique terroir. Il Borro estate grows Merlot, Cabernet Sauvignon, Syrah and Chardonnay along with the indigenous Sangiovese under the careful supervision of Salvatore Ferragamo who personally takes care of Il Borro wines since the first vintage of Il Borro and supported by Tuscan renown winemaker Stefano Chioccioli since 2011. Il Borro joined 11 producers to reactivate one of Tuscany’s first DOCs, the Valdarno di Sopra, which was founded by Cosimo de Medici 300 years ago. All is about history and traditions at Il Borro and certainly a tour of the cellar cannot be missed, historical underground tunnel marked by the centuries which hides under the structure of the main Villa and that will offer to any wine lover, a truly unforgettable experience.
If this was not enough, guests at Il Borro can enjoy an authentic Tuscan dining journey at the two on-site restaurants: Osteria del Borro and Il Borro Tuscan Bistro, both overseen by Executive Chef Andrea Campani. An eco-sustainable cuisine where most ingredients come from its own organic vegetable garden – Orto del Borro (a project taken care of by Ferruccio Ferragamo’s youngest daughter, Vittoria) and sourcing from small producers and local farmers, complete the Il Borro experience.
Each dish is a representation of the local tradition and each ingredient has a story to tell, from organic eggs of the free-range chickens raised on the estate, to the local Pecorino cheese, or the organic Extra Virgin Olive Oil entirely produced on property from 29 hectares of olive groves or the most tasteful raw honey made from 30 beehives living on the estate.
And in 2017 Il Borro Tuscan Bistro has debuted internationally, opening in Dubai and recognized for three years in a row as “Best Italian Restaurant” by the most prestigious guides such as Gambero Rosso and soon to come, Il Borro Tuscan Bistro new opening in one of the most international European capitals.
