Created by Jonathan Morr and Marc Spitzer, the visionaries behind BondST, together with QSR veteran Tim Wildin, YONO fuses the artistry of Japanese modern dining with the energy and accessibility of Tokyo’s famed train station counters.
At the center of YONO’s experience is an intimate 12 seat sushi bar that showcases pristine seafood sourced directly from Toyosu Market, with highlights such as Hokkaido scallop, golden eye snapper, and buttery toro. Each course marries tradition with subtle innovation, offering diners an elevated yet approachable experience.
Beyond the Bar: Elevated Grab-and-Go
Recognizing the pace of Penn Station commuters, YONO also reimagines sushi for on-the-go dining. The menu features made-to-order chirashi and donburi rice bowls alongside a constantly replenished grab-and-go sushi selection, prepared in the open kitchen to ensure freshness throughout the day. This dual format—a refined sushi bar paired with casual takeaway—marks YONO as a category disruptor in New York’s dining scene.
A Menu Rooted in Creativity and Craft
Guests can explore a spectrum of Japanese flavors, from signature temaki hand rolls—like spicy tuna with furikake, yellowtail with serrano ponzu, and wagyu with truffle soy—to indulgent appetizers such as Bluefin tuna tart with truffle ponzu or crab crispy rice. For a more expansive taste, the 12 piece sashimi and nigiri platter changes daily according to the chef’s daily selection of fish flown in from Japan’s acclaimed Toyosu Market. Highlights of the menu include the A5 Miyazaki Wagyu handroll, a smoked ceviche, and the velvety chilled uni rice along with some new seasonal specialties that showcase local provisions.
