The latest outpost of the beloved NYC dining hotspot, Bondst Hudson Yards, offers stunning panoramic views of the Hudson River while introducing a curated Japanese brunch menu every Saturday and Sunday. Guests can savor new and beloved dishes, including soufflé matcha pancakes, lobster brick toast, okonomiyaki (a potato and cabbage pancake topped with smoked salmon), wasabi Bloody Marys, bento box spreads, and BondST classics.
This fall marks a significant milestone as BondST, known for its modern take on Japanese-inspired cuisine, launches brunch for the first time in its 25-year history. The innovative menu features unique Japanese signature dishes and cocktails served in a playful style, ranging from whole-table bento boxes to extravagant seafood towers. Available on Saturdays and Sundays at their Hudson Yards location, this brunch experience promises to elevate NYC’s vibrant brunch scene.
Guests can expect a one-of-a-kind Japanese brunch that offers both unique flavors and shared experiences. Signature cocktails like wasabi Bloody Marys complement favorites from BondST, all designed for sharing with family or enjoying with friends. Created by Executive Chef Marc Spitzer in collaboration with Owner Jonathan Morr, the menu highlights include marinated tuna Cobb salad with soy-braised egg and dashi-poached fingerling potatoes, Japanese mushroom omelette, lobster brick toast, eggs Benedict with yuzu hollandaise, fluffy Japanese soufflé matcha pancakes, milk bread custard French toast, okonomiyaki, and wagyu katsu steamed buns.
The new Bento Table, perfect for sharing, will feature Big Eye Tuna tarts, spicy crispy shrimp, shishito peppers, nasu dengaku, agedashi tofu, tuna crispy rice, Chilean sea bass skewers, sesame-crusted shrimp, spicy yellowtail, and salmon avocado rolls. The show-stopping seafood tower boasts a variety of fresh seafood, including East and West Coast oysters, little neck clams, lobster, colossal shrimp, ceviche, and a selection of house-made dips and sauces. For an extra indulgence, guests can add king crab, Hokkaido scallops, and uni.
In addition to the new brunch offerings, BondST’s signature dishes, including their sushi selection and famed Big Eye Tuna tarts, will also be available during brunch service.
Opened last fall, BondST Hudson Yards features a design by the renowned Jeffrey Beers International. The location offers breathtaking views of the Hudson River and Heatherwick’s Vessel, creating an ideal backdrop for brunch. Beyond brunch, the restaurant serves lunch and dinner, featuring cherished classics from BondST’s NOHO location alongside new, bespoke dishes for Hudson Yards, including the much-imitated Sweet Saketini, made with specialty sake originally created for Donatella Versace during the opening party of BondST’s first location 25 years ago.
